We cook out a lot during the warm months. It’s our default shindig. No notice, no invitation, and no menu. It just happens. Somehow, word gets around and in no time, our house is jam-packed with extended family, friends, and a host of passerby hungry people. My mom is always open to it, literally open (our open door policy, you know), which means food has to extend beyond our nucleus of seven. Steak is always involved. That’s the default protein. Always. Round, sirloin, flank, skirt steak… whatever! There is carne for sure and for every carnivore. No shortages there. Most times though, it’s just slapped on the grill after a few hours of drenching in a fantastic mojo. But that’s it. It’s enough just like that since it makes the steak really tender and juicy. But some 6 years, right about the time I started blogging, I wanted some sauce on my steak. A thicker sauce. Something nothing close to our pan juice we smother our dinner steaks with. It was great the way it was, but my funky mind got to thinking and envisioning a robust drool on my cuts. I distinctly remember conjuring up this sauce at one my cousin’s cookouts. I didn’t have time to make it from sractch, which is always preferable, but it’s not what I had in mind. I wanted something super simple but spectacular. And immediately.
After many years of making and tweaking this sauce, I finally settled on a combo that works, adding in a few additional ingredients I knew would make it pop. 6 simple things and voila, you’re done.
The beauty of this steak sauce is its no-fuss approach: Mix ready-made store products, whisk, and pour over your bistec. Also, the flavor profile, embodying all 4 major elements of the food palette, plus the last minute umami, make it glorious! I found the latter in the chipotle hot sauce. Oh goodness me. I hit the spot with that touch.
I’m now bottling this up for some close friends so they can enjoy on their steaks. It works on chicken, too, but just so perfect for a lovely broiled or grilled slab of beef.
Yes, this is a short cut to a real-deal, homemade-from-scracth sauce, but it works. Trust me!

CHIPOTLE AND MOLASSES STEAK SAUCE
- 8 Tbsp A1 sauce
- 2 Tbsp honey or agave nectar
- 1 Tbsp molasses
- 1 Tbsp Worcestershire sauce
- 2 Tsp Chipotle hot sauce
- 1/2 Tsp cumin
- pinch salt
In medium bowl, add molasses first, scraping off with spatula. Add A1 sauce, Worcestershire sauce and stir with metal whisk. Add remaining ingredients and whisk until molasses is well incorporated.
Yields 2 cups.
