Today is the last day of Christmas. After 12 days of festivities and eating to the point of being gluttonous, we come to wrap the most beautiful time of the year. In most Latin America if not all, the 12^th day, or epiphany is celebrated by acknowledging Los Tres Reyes Magos, or the three wise men. Not only is it another day to gift family and friends, it’s another day to get some serious eating in.

I grew up eating much of the same menu we have on Noche Buena, just not as refined or elaborate.  Yet still, it’s all hearty, all soulful, all delicious! I personally don’t forgo anything on the table, especially if there’s a bean present.  Here are 3 easy dishes to make a complete dinner as you and your family say farewell to another Christmas season. Go ahead and eat it. It’ll be another 11 months before we can guiltlessly indulge again.
